Zucchini Crisps

So easy, so tasty, just don't tell them it's zucchini.  This does work better with medium size zukes, the giants have larger seeds and don't slice as easily.  The thinner the slice, the faster they crisp and dry.  Store in an oirtight container, if you have any leftover.

Ingredients:

1medium size zucchini, a pound or a pound and a half
olive oil baking spray
1/4 cup, about, grated parmesan cheese

Procedure:

Wash but do not peeel or seed zucchini.  Slice zucchini as thin as possible, discarding the blossom and stem ends.  Lightly spray a baking sheet or food dehydrator rack with olive oil baking spray and arrange slices in a single layer.  Lightly spray again with baking spray and sprinkle with grated parmesan cheese.  Place in a warm oven, 105 F or as close to that as possible, and start the drying process.  It takes about 24 hours in my natural gas oven with only the pilot light going.
