Herbed Goat Cheese Log

Serve slices of this cheese on a mesclun or Romaine salad, with a vinaigrette dressing.

Ingredients:

1 bunch each, fresh herbs such as parsley, tarragon, chervil, chives
about a handful of each herb, washed and patted dry
1/2 pound or more, goat cheese log, or you can form your own by squeezing
and rolling room temperature cheese into desired shape.

Procedure:

Finely chop and mix all the herbs together and place in a shallow bowl.  Roll the cheese in the herbs, pressing them ionto the surface as you go.  Refrigerate for an hour or so and then slice into rounds before serving.

Serving Size:

8 servings as an appetizer or 4 servings as a salad course
