Sweet Potatoes

The tubers require about 120 days to maturity, and should be dug and cured after a killing frost  unless you live in a frost free area.  Sweet potatoes must be pressure canned but may be stored in the refrigerator in small quantities for about a month or kept in a root cellar or basement after curing.  They do not freeze well unless cooked and pureed first or frozen after par boiling chunks.
